    The Arctic could have summer days with practically no sea ice within the next decade due to emissions from burning fossil fuels, a study has found.

    This would transform the unique habitat, home to polar bears, seals and walruses, from a “white Arctic” to a “blue Arctic” during the summer months, scientists said. The calculation used for “ice free” means less than 1m sq km, in which case the Arctic would be mostly water.

      Antarctica sea ice reaches alarming low for third year in a row

    The extent of ice floating around the continent has contracted to below 2m sq km for three years in a row, indicating an ‘abrupt critical transition’

    For the third year in a row, sea ice coverage around Antarctica has dropped below 2m sq km – a threshold which before 2022 had not been breached since satellite measurements started in 1979.

    The latest data from the US National Snow and Ice Data Center confirms the past three years have been the three lowest on record for the amount of sea ice floating around the continent.

    Mars is a vast, frozen desert. Nowhere is that more evident than at its poles, which are the coldest regions on the planet. However, it looks like the weather forecast for its harsh winters and slightly more forgiving springs could be different from we thought.

    Like Earth, Mars has a volatile cycle that sees snow and ice levels fluctuate as temperatures plummet in the winter and start to rise again in the spring. Unlike Earth, Martian snowfall includes CO 2 snow and is influenced by different phenomena. Now, a team of researchers led by Haifeng Xiao of Berlin Technical University in Germany is reexamining the change in snowfall over the course of a year at the Martian north pole. Their findings suggest that forces such as sublimation might mean there is more snow in the winter—and less in the spring—than previously thought.

    “We propose to use the shadow variations [of ice blocks] to infer the seasonal depths at high polar latitudes,” Xiao and his team said in a draft manuscript recently published in the Earth and Space Science Open Archive.

    New details have been revealed through recently unsealed Cook County court documents, showing how federal investigators in 2020 gained access to encrypted Telegram messages to uncover “a cross-country network of people sexually exploiting children.”

    The Chicago Sun-Times reported that Homeland Security Investigations (HSI) agents based in Arizona launched “Operation Swipe Left” in 2020 to investigate claims of kidnapping, livestreaming child abuse, and production and distribution of child sexual abuse materials (CSAM). That investigation led to criminal charges filed against at least 17 people. The majority of defendants were living in Arizona, but others charged were residents of Illinois, Wisconsin, Washington, DC, California, and South Africa. Ten children were rescued, including four children actively suffering abuse at the time of the rescue. The youngest victim identified was 6 months old, and the oldest was 17 years old.

    Telegram became a preferred tool for defendants in this investigation, many of whom believed that police could never access their encrypted messages. At least one federal prosecutor told a judge that authorities never would have gained access; however, one of the defendants, Adam Hageman, “fully cooperated” with investigators and granted access through his account to offending Telegram groups.

    For years, people have wondered not if, but how much, the Department of Homeland Security accesses mobile location data to monitor US citizens. This week, the American Civil Liberties Union released thousands of heavily redacted pages of documents that provide a “glimpse” of how DHS agencies came to leverage “a shocking amount” of location data, apparently purchasing data without following proper protocols to ensure they had the authority to do so.

    Documents were shared with the ACLU " over the course of the last year through a Freedom of Information Act (FOIA) lawsuit." Then Politico got access and released a report confirming that DHS contracted with two surveillance companies, Babel Street and Venntel, to scour hundreds of millions of cellphones from 2017 to 2019 and access “more than 336,000 location data points across North America.” The collection of emails, contracts, spreadsheets, and presentation slides provide evidence that “the Trump administration’s immigration enforcers used mobile location data to track people’s movements on a larger scale than previously known,” and the practice has continued under Biden due to a contract that didn’t expire until 2021.

    The majority of the new information details an extensive contract DHS made with Venntel, a data broker that says it sells mobile location data to solve “the world’s most challenging problems.” In documents, US Customs and Border Patrol said Venntel’s location data helped them improve immigration enforcement and investigations into human trafficking and narcotics.

Simple brines are little more than sugar, salt, and water, but peppercorns, citrus zest, bay leaves, and all sorts of plant parts can be used to make things more interesting. One universal truth about brines, however, is that you must heat the liquid to get those crystalline solids into solution.

    If your brine is meant for meat, it must then be cooled completely before your pork chop, turkey breast, or troupe of shrimp is submerged into those salty, sugary waters. You can wait for this to happen, or you can use some ice.

    Of course, you can’t just dump a bunch of ice in your brine; that will throw off your proportions and dilute your flavours. Instead, divide the amount of water called for by your recipe in half, use that volume to dissolve your salt and sugar, then add the rest of the water in the form of ice. The ice will chill the brine as it melts, bringing it to the correct temperature and volume.

    You will — I’m so sorry about this — have to do a tiny amount of maths to calculate the correct amount of ice. Water expands as it freezes, meaning one cup of ice is not equal to one cup of liquid water. Luckily, a milliliter of water weighs one gram at room temperature, so all you have to do is count your milliliters, convert to grams, and weigh out that many grams of ice. Let’s use this very simple brine recipe to illustrate:

    Ingredients:

    • 1 cup salt

    • 1 cup light brown sugar

    • 2 quarts cold water

    • 3 bay leaves

    The recipe instructs you to add all the ingredients to the pot and heat to dissolve the sugar and salt, then wait for the brine to cool completely before proceeding. To speed the process up with ice, add the salt, sugar, and leaves to the pot with a single quart of water and heat it up, dissolving everything but the leaves.

    Next, add the ice. A quart of water weighs 946 grams, so grab a bag of ice and weigh out 946 grams of ice. Add that to the brine, stir to dissolve and cool, and submerge your meat. No need to wait.
